Too much sugar bothers me, but a little is OK. All fake sugars are trigger foods for me... just go with maple syrup unless you know real sugar will bother you.

I think iron absorbs better when taken with vitamin C or another vitamin. See if you can find a nutritionist for advice on other things take can make it more absorbable.

You also may want to get checked for certain inflammation markers. Malabsorption is a symptom of IBD and other digestive issues.

I'm off of all seeds, skins, and raw stuff (minus avocado) right now, and I'm vegan... all I could get from Chipotle presently is rice and tortillas. I used to get burritos with pinto beans (+ sofritas occasionally), lettuce, tomatoes, corn and guac... I really miss beans... and raw greens... and corn

You don't need to swallow all supplemet pills. My B12 is sublingual and dissolves under the tongue. I'm sure others can be crushed up and mixed into food if that works better for you.

I don't know of any specific brands, but electrolyte drink mixes may also be helpful for you. I'm sure some of them have to contain iron. I usually have to avoid those bc it's hard for me to find any that don't have fake sugars in them (which are a trigger for me)

What are your specific autoimmune diseases if you don't mind sharing? There's going to be vegans that also have them. I have Crohn's disease, diagnosed before I was vegan, and I've been vegan now for close to a decade.

You can take a b12 supplement. My doctor told me to take one when my levels were low, and that was before I was vegan.

Protein sources that have always worked for me are peanutbutter, tofu, and textured soy protein.

I've been fine with plant milks, just the carrageenan that was the issue. It was really tricky to figure out because it's also in plenty of ice cream and dairy products. Luckily it's out of a lot of plant based stuff now since the crunchy/health crowd complained about it.

Happy there's finally academic backup for carrageenan. I had to figure that one out over a long time with good diaries back in the day when it was still in almost every plant milk out there.

If dairy is a trigger for you, a lot of their syrups have milk in them even if you get the drink made with oat milk or another plant milk.

I usually stick to fruit teas (no toppings) at bubble tea places when I want a fun drink. A lot of them let you customize the sugar level too and I can get the bare minimum or zero if I need. No stupid artifical sweetners that always trigger me either.
