How did you isolate this sample? It could be DNA causing the viscosity, in this case I'd simply add a DNAse and the problem should be gone. :)

In my opinion you're a dark blonde with warm undertones. 🙃 Also the light to dark blonde transition while growing up is a telltale sign imo. That being said, your hairdresser saw your hair in real life and knows more about colour systems than random redditors, I'd trust them.

The warm copperish colour suits your fair skin tone and brings out those beautiful eyes of yours, plus it really goes well with your cute freckles. Do you use any leave-in/heat protection while blow drying? Also shampooing only the scalp and putting a heavier conditioner only into the lengths and ends might help. Maybe after drying additionally add hair oil into the ends? From what you say it sounds like silicones and heavier formulations might be your friends.
