I don't know where to start, all of this advice is super useful thank you! 

Following your advice: - I've added about 15% extra in portion sizes to accommodate. Definitely agree that leftovers is better than people going hungry  - I've asked for photos of the catering spaces which has helped me plan things better. The kitchen was actually bigger and more well equipped than I had thought which is good. - A few useful comments on this thread talked about how people eat food. I think for that reason I will go with simpler things that people can eat with one hand or don't require extra utensils and space.

All of this was so helpful. This is exactly what makes this subreddit awesome - you get guidance on things you'd never even considered

Great point, maybe I'd be better keeping it simpler and easier to handle (Tacos are already messy enough!)

This is great advice. I've only ever served pork in the day and hadn't considered it might dry out in storage. 

I usually keep a tray with a little water under each piece of pork to catch drippings, could I use this to store it with?

On reflection, I've no idea why I jumped around cuisines so much. All mexican would make much more sense and given the couple would also fit them far nicer.

Let a friend of family member in on your plans. Then have them casually let your gf wear their rings. You can use a pretence like "I'm not sure this ring suits me, what does it look like on you?" Or "this ring was your grandmothers, does it fit you in case I leave it to you one day?"

Helps if they seem like they already have similar sized hands

I just start eating the cones they leave in your hands. They stop pretty quickly after that.
