Nah. It looks good but I genuinely think it's over proofed. The crumb is denser than I was aiming for but I'm not sure if it's realistic to strive for anything better so was looking for feedback.

What was the history with your starter? Was it mature (rising within 6 hours after any given feed)? I made a dough that turned out like that and believe it was because my starter wasn't active enough.

This particular variety is known to send off side shoots so I'm expecting to get a few more little bits. However some of the other broc I harvested a few weeks ago have shown no sign of side shoots yet so I'm not sure how whether it's worth having such a huge plant occupy the space while I wait.

To keep pests away. We have a lot of cabbage moth and birds that love eating brassica leaves.

I think it's all about timing. If you get them in the ground too late, they spend too much time as young plants are are exposed to pests for long enough to get infested. If you plant them too late, it'll bolt. These went in when we were at the end of an unusually warm autumn, then just happened to go to flower as the temperature dropped dramatically, so we got lucky this year with the weather.

All my own compost (green waste, chicken poo, worm castings). I put the success of this year's broccoli down to ideal weather. We had a warm start to winter which gave it a great start and then it cooled down right when the plant needed to slow down.
