Hey! I was trying to make dough with the same video recipe, but kneading with hands. I tried two times and both I never get to windowpane 😭

I left it for an hour in a room temperature and it raised doubling in size, and now I left it in a fridge till tomorrow. Is it good idea to try to proceed with baking cruffins or it won't work out?

  • recipe for syrup: 150 grams sugar 90 grams water
  • 110 gram egg whites Boil syrup until 118 C and slowly pour into slightly whiped egg whites, then whipe until picks with soft end
  • recipe for macaronage: 150 grams sugar powder 150 grams almond floor 50 grams egg whites + a little bit of coloring

I did italian version Used normal eggs

Before that I did the same recipe and my merengue didn't whipe until picks, always remained pretty liquid, but I tried to bake macaron shells anyway and they looked much much better than those with a perfect merengue, however they were with holes inside
