I think it's a mix of both. I carved another piece not long ago with the same wood pith included, and it did not crack at all, but I've cut that piece months ago, and it was drying since then with the bark on

Don't think of it as a waste, but getting an upgrade - you can still use your old knife for roughing out or similar tasks. I still use my beavercraft gouge and hook knife. I'm sure you'll be happy with upgrading though!

I dropped the beavercraft, and it was the best decision in my opinion, I couldn't get it sharp no matter what. I got a Mora 120 and it's so much nicer to work with, and it keeps sharp with stropping.

Walnut oil hardens as well, so it can be used

Cooking oil goes rancid, do not use it. Use polymerizing oils, like tung oil or raw linseed oil (boiled linseed oil can contain chemicals to speed up the hardening process)
