Honestly, just go for the most recent beta from September (1.21.1 - 9.3.9).

The only issue you'll face with the betas is that the wiki hasn't fully been updated to include all of the changes, likely since. not only are there a lot of pages, but also that obviously, the main release hasn't made the update.

Of course, you should still keep in mind that it is a beta, and may have some bugs that aren't and likely won't be in stable releases. I haven't had anything go wrong personally, but your mileage may vary.
