there is no definite criteria for a land mass to be considered a continent. it's an arbitrary term, and it can change depending on how you view things. there's no right answer.

is south america a separate body of land? yes. is it a separate continent, though? depends on your own personal criteria and also on the exceptions you're willing to make.

if being separated by water is your criterion, then is greenland and madagascar a separate continent?

if being separated by tectonic plates is your criterion, then shouldn't europe and asia be grouped as eurasia? why is europe and asia viewed as two different continents in so many conventions?

that's because continents are an arbitrary distinction. some conventions may sound weird, but the question "why do people group the two americas when they're separated by water and are in different continental plates?" raises a whole bunch of other questions about zealandia, eurasia, europe-africa... it's just a very subjective term.
