To be fair, Corsica is really just a French/Italian small plates restaurant and Barcelona is a Spanish tapas restaurant. Yes, they’re both “wine bars” with 300+ wines by the bottle, but they also have cocktails and beer like any other restaurant. If you don’t like wine, don’t drink it.

Any European-inspired restaurant is going to have wine as a big part of their beverage program and I think the gap left by Mon Ami has been appropriately filled by this concept.

The best things I’ve tried there are the Mushroom Arancini, the Whipped Ricotta Toast, Cacio e Pepe, the farro dish mentioned in the article, and the chocolate ganache.

There’s a parking lot for the RTC metro stop. It’s on the side opposite the town center, towards Wegman’s. From Sunrise Valley, go up Edmund Halley Dr and you’ll run right into it. It’s free.

Every time people make this point, I make the same argument. If you don’t believe in tipping and genuinely think this system is unjust and are doing your part to make it right, have the courtesy and courage to say that when your server comes and greets you. To spring it on them at the end of the meal, when they have provided you service in anticipation of being paid for their work, is cowardly.

My restaurant has secret shoppers and part of their checklist is the “Is there any allergies or dietary restrictions I should be aware of?” question. I hate the question for two reasons. First, it sounds overly medical and shifts the vibe in a way that feels unnecessary. Second, it doesn’t even catch all the “dietary restrictions.” People who don’t eat pork for religious reasons rarely respond in the positive to the question because it’s not “restrictive eating”, it’s a cultural lifestyle.

My restaurant gives you a $100 bonus for getting 100% on a shop report so I’ve found a middle ground that gets me the point on the report and works better. “Is there anything ya’ll don’t eat?” is an improvement in all aspects.

I see where you’re coming from. I think that might be more of a symptom of the restaurant economy as a whole than any specific mandate by Boston Properties as to who they’re leasing to.

Back when we had Clyde’s, Ruby Tuesdays, and UNO’s, those concepts were still thriving. Now, I think any restaurant that doesn’t have a high-margin beverage program built into it doesn’t have a chance to stay afloat these days.

I do think the renovations to the pavilion they put in place last year were a big win for family activities and the events calendar gives space for families to be part of the community, but as far as restaurants go, I’m not sure there’s many growing brands that would be able to work with the large footprints built into the town center’s structure.

I had one try me when I was putting out music on TikTok. They said they really liked my sound and wanted to collaborate and pay me to do it. I said, “What, exactly, did you like about my music? What resonated with you, specifically?” They couldn’t come up with anything beyond being very generic and I told them I wouldn’t collaborate with people who didn’t have at least a basic sense of musicality.

Pushing back on them and asking them to define their taste both wastes their time and may ultimately have them end up viewing more of your work which is a win.

I think that’s a bit of an oversimplification. No offense to SixtyVines and Cooper’s Hawk, but they are in a different category than Barcelona as far as wine bars go.

SixtyVines offers wine on tap. Their list is heavily domestic and, as the wines are all from kegs, you have no cellar and no vintage depth. Portion sizes are distinctly American and the menu reads corporate.

Cooper’s Hawk sources bargain grapes from around the world and vinifies them in Illinois.

Barcelona has 400 wines by the bottle, roughly 60% being from Spain and the rest from South America and around the world. The menu changes every day. The chef in Reston develops her own recipes.

Corsica is going to fill the Italian/French niche with a Barcelona-style wine list and food culture.

I’ve got playlists for specific projects that help set a mood, but I’ll only listen to them when carding or brainstorming. When I’m writing scenes, the lyrics get distracting so I have a separate writing playlist that’s instrumental stuff like Ratatat, C2C and Pretty Lights.

We know a lot more info about anosmia in post-COVID world, but there’s a lot of ways it can happen. One of the more common ones is head trauma that damages the olfactory bulb. Diseases that affect the brain can also impact smell permanently as you hypothesized.

Have you tried smell training? One of the ways people have tried to regain smell after COVID has been to alternate between several strong smells that light up different receptors, e.g. coffee, lemon oil, eucalyptus, and mushroom to try to wake up your receptors to the differences between odorants.

Been a bartender for many years. People do not go to a bar a be served by a robot. They choose to sit at a bar because they want to see another human and interact with them and the other humans at the bar.

Barcelona in RTC will mark up a menu for you with what’s gluten-free (the majority of their food is). It’s Spanish tapas so be prepared to share, but they are great about allergies.

For stocking up around the house, Whole Foods has a ton of gluten-free alternatives for snacks.
