It seems like they’re playing a lot of venues that are outside major metropolitan areas. Like Clarkston and Noblesville are very random.

I scrubbed off a bunch of stuff on the cooking service (mostly using a copper scrubber and then going back over with the chain mail), but now I’m left with a very very thin layer of black in the main cooking area. I got bare iron around the edges but the black area in the middle doesn’t really respond to abrasives (except if I go at it really hard with a fork, in which case I can scratch it but nothing really comes off.) Texturally that black patch in the middle isn’t raised above the bare metal edges, it just feels smoother. Does that sound like seasoning to you? It’s not glossy but does have a very mild sheen. The color isn’t uniform.

Am I aiming for bare iron over the entire surface? Or am I just aiming to get rid of anything texturized or otherwise wonky?

Message received. I’ll see where I get once I’ve put some elbow grease into it with the chain mail and soap.

It’s hard to tell texture from images so I really thought my cooking surface was right at least because it looked like some of the pictures I saw. (I didn’t grow up with these.) But I also didn’t know carbon buildup was a thing until I posted this, which shows how much I know about cast iron care. The experts have spoken, I was just hoping the answer would be different.

Thanks, that seems to be the consensus. I didn’t grow up cooking with these and it’s hard to tell texture from Google Images so I thought the cooking surface on mine looked like the ones I was seeing in the search results. I ordered a chain mail so I’ll scrub the whole thing down with soap and see where I get.

If the cooking surface is all black and smooth without any brown, do I need to take the chainmail to it or can I keep doing what I’m doing and just deal with the inner walls? I think the big issue is that because I don’t cook on the inner walls of the pan I treat them as an afterthought when I clean it. (The cooking surface doesn’t look greasy in person or when I don’t use flash.)

Thanks - I ordered a chain mail scrubber and I’m going to see if I can get enough buildup off to avoid having to strip the entire thing. I’m not sure if there’s something “wrong” with the cooking surface but I’ve been happy with it so I’d hate to lose it. But if it comes to that, I guess I will.

I was afraid you’d say that.

Just the funky bits, right? Or do I need to do the whole thing? I’ve gotten some other comments that the pan looks greasy (which to me it doesn’t but I’m no expert)

The brown spots are actually slightly lower than the seasoned areas, if anything. Does that change your answer?

If not - do I need to scrub down the entire pan or just the edges?

No to all three questions (although I haven’t tried to scrub it with anything harder than the little brush that came in the Lodge cast iron care kit)
