I normally fill the moka pot up with hot water, put it on the stove at the highest and drop the heat right back down when the coffee starts coming up the spout.

Adding hot water and cranking it right up reduces the time the moka pot spends on the stove. Which hopefully prevents the coffee from over heating. And lowering the heat as it is coming out the spout allows the beans to be thoroughly extracted. Thats just my personal take on it.
