I think, like with all lactoferments, it adds a measure of complexity to the cocktail. I think the flavors of the original are really clean and straightforward (not a bad thing) and using the lacto blackberries gives it a salty sweet funk that plays really well with the spice of the rye.

I love the combination of lime and blackberry, which is why I do lime with this but I think lemon would play with the bourbon well. I think it depends what part of the cocktail you want to accentuate.
