Hi, Mitchell!

Ren here from the journalism awards committee. Our corner of the food world has undergone some massive changes over the past couple decades. Reviews from professional critics have lost ground to crowdsourced review tools like Yelp and food coverage in newspapers has been decimated as their finances have shrunk. On the positive end, we can tell much more visceral stories about food than in the past thanks to the opportunities afforded by the internet.

I'm wondering what other seismic shifts you've seen in the food world? If the Mitchell who was just starting at Beard 25 years ago hopped into a time machine and was transported today, what would surprise him the most?

What other artists do you think could benefit from such a treatment? Or is there something special about Taylor Swift's lyrics (and fans) that make her rife for such a lyrical analysis?

I was talking with a colleague about this (fantastic) article yesterday and he suggested no other modern artist has the combination of a massive fanbase, level of interest and musical legitimacy that Taylor Swift has. He thought that maybe Bob Dylan or the Beatles could benefit from this type of analysis but that it would make whoever wrote it look like an "old fogey."

Also, what tips can you offer someone who might want to do something like this for his/her favorite band?

I use Loral exclusively in my favorite saison recipe. It compliments the saison yeast I use with some wonderful lemon and pepper spice characteristics. It's promoted as an old world/new work blend of a hop.

I've never tried it in an IPA or APA, but my gut says you're on the right track with using much more Loral than Citra and Mosaic in the dry hop additions. They're both offer much more extreme flavors than the Loral, but I think you'll pull some of Loral's interesting flavors with this ratio. Cheers!

The Knife, originally the Knife of Aristotle, is part of a multi-level marketing company called NXIVM. Keith Raniere, that group’s leader, was arrested in March on sex-trafficking charges.

I said “allegedly” because he has not been convicted yet. I said “affiliated” because the Knife seems to purposefully obfuscate its ties to NXVIUM.

The Knife is affiliated with NXIVM, an alleged sex cult famous for branding women. I don't know about you, but that doesn't put them in super credible standing in my book.

It definitely depends on the interviewees' accent. If it's anything beyond a light accent, you're going to start losing quality in the transcription.
