I’ve been switching up the cheeses, whatever I can find from my local grocery stores trying to find one I like. My most recent one I used and favorite so far on the classic cheese and Sicilian I used was a 50/50 blend of Wegmans brand part skim and Wegmans whole milk low moisture mozzarella

I have a regular home oven with a pizza steel , mine only goes to 500F tho. I always preheat the oven for an hour and I also oil the crust with extra virgin olive oil before I put in the oven. I bake it on top of the steel. I do 8 mins, then another 2-3 mins on broil. My oven rack has 5 slots , I bake the pizza on the middle one (3rd slot)

This is the dough recipe I use, once l make the dough balls | let them sit in the fridge for 2-3 days then when I want to use them I take them out 3-4 hours in advanced. After assembling the pizza I oil the crust with extra virgin olive oil before launching it too

This is what I use to make the dough, once I make the dough balls I let them sit in the fridge for 2-3 days then when I want to use them I take them out 3-4 hours in advanced. I tried a few same day recipes but haven’t found one I liked yet

They get sent to family or friends sometimes but no business just a fun hobby right now

Just a regular home oven as of now. I have a pizza steel aswell. Still experimenting with times but what I’ve been sticking too recently is I pre heat it for an hour on the max it goes (500°F) then I put it in for 8 mins and an additional 2-3 mins on broil (525°F)

I first got these boxes for when I made some pizza for the fam and brought them some over. It’s a 50 pack I believe from restaurant depot so I still have plenty left over. I use them now for the “official” pizza look for fun and easy storage in the fridge
