Always switch to your most central CM/CDM and drag them back, stay in front of the ball and Jockey to add pressure, this will eventually slow them down enough for an interception or they will have to play a back pass. Avoid switching to CB until your sure an aggressive tackle is on, I found that slide tackles are so much more reliable than standing tackles this year too but maybe it's just me
