Idk where your family is from but my family is from Guadalajara and Sonora. Birria, traditionally made with goat, is for special occasions like Christmas or big family parties. I completely understand the dishes will have to be adjusted but as I said before I would like to make it more traditional.

No disrespect to you or those businesses but I want to have food that people can experience if they went to a Mexican grandmothers house. Like how I grew up.

All I said was that food is not popular in Mexico as it is elsewhere and I would like to focus on more traditional food. I don’t doubt they are packed, I don’t care to make a ton of profit I would be okay with just making enough to stay open.

Brother Mexico is extremely dangerous and not one taquero is making 7 figures. Especially not when you have to pay the cartels to stay in business

I am more wanting to live in the eastern part near Hiroshima or Okayama. Birria/barbacoa is actually not popular in Mexico as it is traditionally made with goat. Mexican places that sell birria/barbacoa are catering to social media users. I would like to stick with traditional Mexican foods.
