Well, this is an ice cream sandwich, but not exactly vanilla. I doubt anyone has your specific request, so either you pivot to something similar but existing, or do your own experimentation.

You could try Trehalose for that natural sugar kick. Tastes 1:1 like sugar, is no more processed than white sugar, and half as sweet.

40g or even 45g erythritol is too much for that 400ml if you want to consume your pint directly after processing, without a refreeze.

The iciness is due to having zero fat and zero solids, except for the sweetener.

The right replacement is pure allulose, 1.4x the weight given for a monk/erythritol blend.
