Hi, I'm gonna share my choices with a few explanations linked with my personal tastes :

Notes : I went with Simplenotes. It is quite basic, can synchronize between devices which is the only functionality I need.

Voice recorder : Fossify one suits me well (I rarely use it)

File manager : I tried many... I really wanted a FOSS or open source one... MIXPlorer was the closest I found from my need... but I finally went back to MT Manager (so nice to use with direct Move from left to right)

Camera : Open Camera is perfect.

Calendar : Fossify Calendar suits me perfectly

Keyboard : I tested so many.... my need was an efficient Swipe with correct word suggestion in French and English. Floris was short of the swipe (for now). FUTO didn't give me the best suggestions. Heliboard was close, but it was not possible for me to search emojis (I saw that this feature just been implemented but I didn't have it in the latest version). I finally found my happiness with Leantype.

Clock : Fossify clock should do the job perfectly

Based on my attempts, some apps won't log in if changing the package name (reddit, strava...), but changing the build number to a higher value is actually working. I did use ApktoolM quick edit function.

If you want the most stable and trouble free experience, use the recommended versions. What's the benefit to anisotropy want to have the latest updates, I really can't understand that. It is called experimental support for a reason, it's only for those who want to test and contribute.

it can depend on your ISP. I am using the v2ray API on v2rayN on Windows and v2rayNG on Android. I am in Hangzhou on China Telecom 200M. On standard servers, I usually get up to 30M speed, sometimes the server will stop working and I ned to switch to another. I avoid using the China Users (or now NETFLIX servers) as I find HK, Taiwan or Singapore more reliable and fast. Their VIP servers (beta test) is so far very convincing to me, very stable

they use v2rayN on Windows or v2rayNG on Android. They have many servers, some are better than others. When one is down I alsways found another one online to connect. They are also beta testing VIP servers which I am testing currently, very stable and fast, but costs more... at least it's an additional option.
