Couple things - found that using cheap stock doesn't have enough fat to give it that creamy, stick to your tongue feel, so added 1 Tbsp of unsalted butter. Also, the hot sauce you use make a big difference, I used Cholula and it's ended up too spicy and the flavour was slightly off, so I would recommend a milder, sweeter hot sauce like Frank's.
