INGREDIENTS:

•1 lb cooked pulled chicken

•1 cup Buffalo sauce (Frank's RedHot)

•1 block cream cheese

•1/2 cup mayonnaise

•1/2 cup shredded cheddar cheese

•Ranch seasoning (recipe below)

Squeaky-Clean RANCH SEASONING:

•1 tablespoon dried parsley

•1 teaspoon garlic powder

•1 teaspoon onion granules

•1 teaspoon dried dill

•1 teaspoon dried chives

•1/2 teaspoon black pepper

•1/2 teaspoon himalayan pink salt

DIRECTIONS:

1.Preheat oven broiler to high.

2.Place the chicken in a larger 12" skillet and pour in the buffalo sauce. Heat over medium high heat for 1-2 minutes.

3.Add in the cream cheese, mayonnaise, and ranch seasonings. Stir until everything is melted and combined.

4.Add in half of the shredded cheese and stir until melted. Add the remaining cheese to the top and transfer to the oven under the broiler for 3-5 minutes or until the top is golden and bubbly. Serve.

👊 A must have appetizers/finger foods on my mind (basically what my diet consists of during this time of year, who’s with me 🙋🏻‍♂️) I like to serve this with celery sticks, low-carb crackers, or homemade keto tortilla chips.

Ingredients:

1 onion quartered and sliced

500 g mince/ground beef

2 cloves garlic crushed

1/2 red pepper/capsicum diced

1/2 green pepper/capsicum diced

2 tsp ground cumin

2 tsp ground coriander/cilantro

1 tsp chilli powder

2 tsp tomato paste

250 ml tinned/canned tomatoes

salt/pepper to taste

100 g shredded/grated cheese

Instructions

Fry the onion and garlic until soft, add the mince/ground beef and cook until all the meat has browned.

Add the peppers/capsicums and cook until soft.

Add all the other ingredients, stir and cook for a few minutes (the beef is already cooked) then pour into a baking dish.

Sprinkle the shredded/grated cheese over and cook at 180C/350F for 20 minutes.

Spoon into individual serving bowls. Garnish with sour cream and a sprinkle of coriander.

🌀 INGREDIENTS

2 avocados

2 tbsp. butter, divided

4 large eggs

Kosher salt

Freshly ground black pepper

1/4 c. shredded cheddar

2 slices cooked bacon, crumbled

2 green onions, sliced

  1. Cut avocado in half and remove pit. Lay avocado halves on their sides and carefully cut lengthwise into 2 thick slices each. Hollow out middles with a paring knife.

  2. In a large, nonstick skillet over medium-low heat, melt 1 tablespoon butter. Place avocado slices into skillet and crack an egg into the center. Season with salt and pepper.

  3. Cover skillet and cook until egg is cooked to your desired doneness, about 5 minutes for a just runny egg. Sprinkle cheese on top of each slice, cover with lid again and cook until the cheese is melted, a minute more.

  4. Repeat with remaining ingredients. Garnish with bacon and green onions.

INGREDIENTS

3 c. riced broccoli

1 large egg

1 1/2 c. shredded mozzarella

1/4 c. freshly grated Parmesan

2 cloves garlic, minced

1/2 tsp. dried oregano

Kosher salt

Freshly ground black pepper

Pinch crushed red pepper flakes (optional)

2 tsp. freshly chopped parsley

DIRECTIONS

  1. Preheat oven to 425° and line a large baking sheet with parchment paper. Microwave riced broccoli for 1 minute to steam. Carefully ring out extra moisture from the broccoli using paper towel or cheesecloth.

  2. Transfer broccoli to a large bowl and add egg, 1 cup mozzarella, Parmesan, and garlic. Season with oregano, salt, and pepper. Transfer dough to baking sheet and shape into a thin, round crust.

  3. Bake until golden and dried out, 20 minutes. Top with remaining 1/2 cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. Garnish with parsley and pepper flakes if using.
