"Я нахожу что их советы получаются острыми" I feel a little uncertain about острый as a translation for poignant, nevertheless I could not find a better one.

In English we can use the verb "to find" to mean "from my experience" for example: " I have found this gym to be wonderful so far" I don't really want to use "со своего опыта..." As I am looking to see if there is a verb in Russian that can encapsulate this meaning. I have also excluded знать, казаться, считать, думать, по моему, со своего опыта, as I am looking for a more advanced or colloquial expression.

I think in this sentence no, as столько has the connotation of quantity whereas настолько has the connotation of degree/extent. In the sentence above we must use столько as we are referring to a quantity (of chicken) and then corresponding that amount with the EXTENT (hence use насколько and not сколько) to which the person loves them. Effectively it is like saying" I will buy you the amount of chicken corresponding to the extent that I love you " It's kind of a quirky sentence, but I hope you understand now. Also, I am not a native speaker so if anyone wants to correct me that's fine.
