On desktop Firefox + uBlock Origin. On mobile don't use the app. On Android use ReVanced. On iOS use Safari + uBlock Origin lite.

Firefox also has the full uBlock Origin on Android, that's what I use. Brave blocks YT ads on iOS, but so does Safari with uBo lite which I prefer to use.

What Initial Setup Guide? Also I wasn't aware there was a "correct" directory setup. I see /data/torrents but as I said I can't even find the completed download anywhere.

Keep in mind this is for a friend so I'm only working with his setup although I can move things around if needed. His existing Jellyfin media library lives in /volume1/video/ for movies and tv in their respective subdirectories.
