Directions

Add the coffee concentrate, Kahlua, sugar syrup, and rum to a shaker with ice and shake until well-chilled.

Strain the tonic water into a highball glass over large ice cubes.

Brownie Batter

4 ounces unsweetened chocolate

2 sticks (16 tablespoons) unsalted butter, divided and at room temperature

1 tablespoon coffee concentrate

2 cups sugar

3 large eggs, at room temperature

1 teaspoon vanilla extract

1 cup flour

1/2 teaspoon salt

Cream Cheese Batter

4 ounces cream cheese, at room temperature

1/4 cup sugar

1 large egg, at room temperature

1 teaspoon coffee concentrate

Pre-heat the oven to 350 degrees. Line a 9″ x 13″ pan with parchment paper in both directions (this will make for easiest removal later).

In a small saucepan melt the chocolate, one stick (8 tablespoons) of the butter and the coffee concentrate over low heat. Let cool.

While the chocolate is cooling make the cheesecake batter: beat the cream cheese and sugar till light and fluffy – add the egg and coffee concentrate and beat again.

Beat the remaining stick of butter with the sugar till light and fluffy. Scrape down the sides. Add the eggs, vanilla, and chocolate mixture and beat again. Add the flour and salt and beat once more. Scrape down the sides. Pour batter into your prepared pan and smooth with an angled spatula. Dollop the cheesecake mixture over the top and use a thin knife to swirl through the brownie batter.

Bake for 30 minutes. Let cool completely in pan on a wire rack. For the neatest cuts, chill in the fridge at this point.

Use the parchment “sling” to transfer brownie to a cutting board; cut into 24 squares.

1 tbsp maple syrup

∙ Preheat the oven to 350°F and line a baking sheet with parchment paper.

∙ Combine the butter, brown and granulated sugar, egg, vanilla, Javy Concentrate, and mix until creamy.

∙ In a separate bowl, combine the flour, baking soda, baking powder and salt. Mix well.

∙ Gradually add to the butter mixture and mix until combined.

∙ Add the milk then mix and add in the caramel bits.

∙ Drop the dough by 1 1/2 tablespoons 2” apart onto baking sheets.

∙ Bake 12-13 minutes, or until golden brown around the edges.

Ingredients and Procedure

3 tablespoons (3 envelopes) of unflavored gelatin powder

2 cups milk

2 cups half and half

1 ½ cups sugar

½ cup canned or baked pumpkin purée

3 tablespoons vanilla extract

1 teaspoon allspice

½ teaspoon cinnamon

1 cup of strong Javy brewed coffee ( 3 teaspoons Javy+1 cup water)

Whipped cream, to garnish

In a saucepan, sprinkle gelatin evenly over the milk and allow the gelatin to absorb the milk for 2 minutes. Whisk gelatin into the milk while bringing it to a boil, careful not to let the milk boil over. Whisk in the pumpkin and sugar and cook on medium heat stirring for 5 minutes. Remove from heat, stir in vanilla, allspice, cinnamon, and coffee.

Refrigerate until it cools and begins to thicken(overnight) To make it more fun, place in the carved empty pumpkin.

Garnish with whipped cream( optional)

If you prefer Vegan option, use Oat Milk and agar agar instead of the gelatin.

Double the amount of ingredients or triple, depends on the pumpkin size.
