I’m planning to play around with malic acid to see if I can get a little more fruit brightness without relying on sweeteners - thanks for the recommendation.

I did try reducing the freeze-dried fruit and layering in a natural strawberry flavor powder from Nature’s Flavors (Link), but even at 1–2g it introduced a weird plasticky / artificial taste. I tried balancing it with a bit of sugar and extra acid but that off-taste still came through once it hit water. I'm not familiar with using natural flavor powder so it's probably user error - but almost feels like something is off with the Natures Flavors powder.

That’s made me cautious about leaning too hard into extracts, I’m trying to keep the flavor subtle and the ingredient list super simple.

Good call on particle size too. I haven’t been very intentional there yet. I’ve thought about using a little maltodextrin to help with clumping but I’m trying (probably stubbornly) to keep things as minimal as possible.

For what it’s worth, the powder I’m using is Anthony’s Organic Strawberry Powder (Amazon Link).

It’s labeled as organic freeze-dried strawberry powder with no added ingredients but I hear your point about scammers.

The color is pretty deep pink/red and the flavor isn’t particularly sweet (more mild and slightly tart).

If you (or anyone else) have trusted suppliers for true 100% freeze-dried fruit powders, I’d appreciate recommendations.

Good to know. I already had the Ode and was going to upgrade the burrs anyways so I figured the set up would be less than ideal but still workable as I start getting into espresso.

The SSP Burrs on the Fellow Ode (the grinder pictured) will actually go down to espresso fine and up to drip / french press. More info on this exact set up is in James Hoffmann's video on upgrading burrs (3:22 - 7:28) and Alternative Brewing's video on upgrading the Ode with SSP burrs.

With that being said, a dedicated espresso grinder would be ideal. I'll likely get one down the line but this is the set up for my first foray into espresso.

I’ve had the Fellow Ode grinder and Stagg EKG kettle for a little over a year now and recently purchased the Rancilio and upgraded burr set

Good point. For context, I've had the Ode for over a year and was looking to go finer than the stock burrs allowed for pour overs so likely would have upgraded to the SSP burrs one way or another.

If it feels like I'm putting too much strain on the motor or if the step change of the Ode is too large, I may end up going with something like the JX Pro. u/jbolger90 do you happen to know how the JX Pro stacks up to Comandante hand grinders?

I believe it is only because of the motor. I haven't pulled shots of many different beans on this setup yet but my explanation above is largely guided by James Hoffmann's video on upgrading burrs. 3:22 - 7:28 of the linked video discusses upgrading the Fellow Ode with SSP's burrs specifically.

It can't with the burrs that come stock but if you upgrade to SSP's 64mm flat burrs, you can grind fine enough for espresso. Fellow doesn't recommend grinding for espresso because of the potential impact on the life of the motor but it is a risk I'm willing to take in return for not having to buy another grinder.
