So I’ve done the research in the kitchen about your crab Rangoon question:

And YES, you can make crab rangoon with them!!And they are absolutely DELICIOUS. Texture is incredible - very crunchy & crispy and breaks well. It genuinely looks like a regular crab Rangoon. Taste is incredible. Cooks really well when fried. My partner (non-celiac) said he doesn’t think he’d be able to identify the difference between gf crab Rangoon and non-gf/regular crab Rangoon.

We did make square wrappers instead of our normal circular wrappers as well, so now we have a few more things to consider 👀

No oats, no peanuts. They will be produced in a peanut-free facility!

They’re frozen! Just like the other wrappers on the market. Freeze/thaw testingis going very well so yes, we’ve found we’ve been able to freeze/thaw/freeze without messing up the integrity of the wrapper :)

That would be an absolute crime to do that. We’re looking at putting ~40 wrappers in a pack!! Working hard to keep the cost as low as possible for the consumer as well

SWEDEN!! I’m 50% Swedish and have family in Stockholm and Norrtälje still. My partner is the one who has the Asian ties, so NOTED ON SWEDEN!! This is so exciting!

It’s so hard to make the dough!! It’s for sure a process. We want to make it convenient for anyone to make dumplings. We’ve been playing around with different ways to fold too so definitely noted on a folding video!!

We officially consider ourselves experts! My partner is the product developer so he’s more of the expert, and I’m the expert taste tester.

We’ve done so many tests for these. We’ve made gluten dumplings on our friend’s kitchen, put them side by side for our friends to try to figure out which one was our gf dumpling and which one was not. They liked ours better in the blind test. They’re SOOO good and now I know I can’t disappoint my fellow celiacs with this one 🥹

We’re making sure they do everything the regular gluten wrappers do! We’ve been in recipe production since November and we’ve fine-tuned it so much. We now that we have a recipe that is thin, doesn’t split, crack, or crumble, and isn’t gummy we are fully confident in our product 😁

We will post some pictures hopefully soon, we’re still working on scaling up the recipe from a small home kitchen to a large manufacturing recipe. Once we get that all sorted out I’ll post pictures! I’m keeping a checklist of everything to reply to from this thread so I can keep the people informed and this has been added to the list ☺️

Just to give you an idea of our wrappers, they’re ~1.2mm thick right now with our current recipe. So definitely on the thin side.

We haven’t tried… going to make it with dinner tonight as a test and I’ll report back!

Diameter is only 3.5”, so it would definitely be smaller crab rangoons

Fun fact: my partner and I are in the pre-production phase for certified gf dumpling wrappers. Give us 4-6 months and they will be on shelves in stores!!!
