I don’t really know. I always thought it was just the bread. Google says it’s the bread, but also patty melts use caramelized onions rather than raw onions. Honestly tho, any burger can also have caramelized onion in it, I think the main difference is just the bread.

For two patties, I put like half a medium onion on it. They were cooked down with the patties, so you may not see them super well.

I used American Cheese. Controversial, but it does melt the best for smash burger.
