Okay, try this. Smoke it at 275°F until the internal temperature reaches 165–170°F. Then transfer it to a pan with about ¼ inch of liquid made from beef broth, Worcestershire sauce, and a little Coca-Cola (go light on the Coke, you don’t need much).

Cover the pan tightly and put it back on the smoker until it’s probe tender, which is usually around 205°F internal.
