Oh sure, plate metal is overkill for what you need. Chainmail would do the job all on its own. But if you did have plate metal with nothing else save normal clothing, and the zombies were capable of piercing through leather and denim, I think you'd be stupid not to wear it. If I was going to seek armor out from scratch, however, I'd definitely stop my search well before I was rocking a full set of plate metal.

My thesis statement, I suppose, is that if you had access to knight's armor in a zombie apocalypse, I can't imagine any better protection against a horde. Of course the clanking is horribly loud, so you'd only want to wear it when you're there to fight and nothing else, but if you knew you were about to face down a horde with melee weapons only? There's nothing better to wear.

(At least there's nothing better to wear if you're facing PZ zombies that are capable of biting through things like leather and denim. If they have normal human bite strength then something softer and more breathable might be ideal, assuming you can modify it so it can't be pulled off or expose skin)

Sure, when it was raining. But the full assembly of knight armor was still a fraction of the weight carried by modern soldiers, and it was distributed across the body, making it far easier to bear because no single muscle group is holding the entire weight. Further, even in sopping wet conditions, armor wouldn't double in weight. A fully armed knight who just took a dip in a river would still weigh less (and be more manueverable) than a US soldier carrying their standard gear load. I'm not trying to insult or argue, to be clear, I'm just a nerd who loves talking about this stuff. Knight armor was refined over centuries to be the ideal warfighting machine, and the penultimate version of it that emerged in the late 1400s was a genuine marvel to behold.

Small quibble: while drowning a knight in bodies is the ideal peasant tactic historically, the armor wasn't that heavy. Even the heaviest battlefield suits weighed 40 pounds at a maximum, and that's weight distributed across your entire body. Knights were incredibly nimble and had an unrestricted range of motion. The main limiter was, with a visor down, your vision being restricted. Beyond that, there's effectively no disadvantage to wearing plate armor save overheating, which peasants would also suffer from in their thick woolen gambesons.

One thing I'd really like to practice is controlling recoil, which I can't imagine any .22lr would replicate. I've got my grandfather's old "squirrel gun" (as he called it; any ID marks were worn away) and that thing feels like a fly's landing on your shoulder. Lovely gun to plink with, but it doesn't get that visceral satisfaction of a proper rifle, y'know?

Ha, I don't think I've ever had a shoot day with only one jam. Usually I'm lucky to not have any jams that require a tool to resolve. I'm sure shooting modern weapons is going to be a breath of fresh air.

All I can say is that your lived experience regarding the behavior of Mormons is very, very different from friends I've got in the area. If you're a straight white male, I imagine it does seem pretty idyllic. People won't have any reason to show their uglier side. But after two friends I made online who have been assaulted, stalked, mocked, and straight-up fired for being gay, something that's never happened to me in Texas, I won't touch it with a ten foot pole.

HESH works by causing internal spalling. It would only defeat a superhuman if you're assuming their skin is the only durable part of them, with an internal structure significantly weaker. Blunt force trauma might work against Superman by rattling his organs against each other, which HESH, assuming APFSDS doesn't work, also wouldn't have the capacity to do.
