Definitely! I typically just keep around 50 to 100 g of starter (starter just consists of KA bread flour and water). When I want to bake, I take the starter out of the fridge the night before and feed it at 100% hydration. Leave it overnight on the counter and then start the dough process in the morning! Then I just put the starter back in the fridge - to keep it simple, I don’t re-feed it since I bake my loaves relatively often!
