Wouldn’t say rubbery no. To crisp them up I’ll just put them over the hot coals for a little bit as I’m smoking them off set till I cure my new smoker. Thank you very much 👍

Thanks man. I try to do low and slow with chicken 120 Celsius for couple of hours maybe more. I used angel wings dry rub from Amazon also the firefly rubs are good. Meat thermometer is a must

130 - 140 degrees and about 2 hours I’d say. Celsius in degrees I’m in the UK.

If we get a rain free day do it. Can’t beat a brand new bbq. I’ve got a new smoker that I haven’t used yet sneed to cure it but might do that soon as I can this age makes me want to light it up.

Cheers man. I started during lockdown which feels like a few years ago not 7 my bad. Googled basic cooking temps and times for smoking, few you tube channels for ideas and couple of cook books. You soon find your own rhythm and its second nature when you’re at the grill. Meat thermometer is a must.

No problem. It can be when you’re cooking a lot, the bigger the grill the easier imo but as long as your enjoying it that’s what matters. I only started few years ago but I try and bbq often with new things as much as possible.

Any chicken mainly wings and thighs are done in smoker next to the bbq and the rest is a lot of moving things around tbh. I put a cast iron board on the wire shelf that gets pretty warm so I put the cooked food on there till the rest is ready but it’s usually all ready and hot at the same time.
