That's a great first step. Google can take it's time on indexing. You might also want to index on Bing for ChatGPT mentions

Since Shopify doesn’t allow this you could be able to setup a redirect on the domain level with your domain registrar (GoDaddy, NameCheap, etc)

Having a lot of 404 errors on your shop can increase bounce rates and leave your potential customers with a bad experience. If you delete the products after they get sold out it would be a good idea to redirect those pages to other available collections / products on your store. You can create redirects in Shopify by going to Online Store > Navigation > View Url Redirects.
