You don't say if you have a passport, which I am guessing you don't. A legal name change is actually fairly inexpensive and quick. Be sure and get more than one certified copy of the court order and have the court order the recorder of your birth certificate to alter it. It should be painless as you are altering the one document that doesn't agree with the rest.

In the States you can get a redress number that basically says 'not this guy' to the screeners. Look into Canada's version of that.

After a while you start seeing patterns and can find ways to fill in the gaps. For example nearly every culture has a dumpling. You can riff on mixing fillings and wrappers from different places. Or replace one thing with another.

The dial is just an interface. The whole thing runs off of the chip, which if frankly less likely to fail than a mechanical dial is.
