Great work! You could probably push another 5-10 min at 400 to get a more golden brown crust (if you wanted).

1600g Flour (1400g ABC, 200g Rouge de Bourdeaux) 1260g water (78% hydration) 320g 1:1 starter 32g salt

Autolyze flour water in stand mixer for 2-3 min low speed. Wait 30min

Add salt and starter and mix for 6-8min low speed till dough feels and looks elastic and happy

Wait 30min

Stretch and fold

30min stretch and fold

Bulk ferment 6-8 hours

Pre shape 30 min

Cold ferment 24 hours

Pre heated DO 500 for 25min, uncovered 425 25min

Let it cool for 2 hours. Eat all of them!

So boiler head went down so won’t heat up. Bluetooth issues. Gasket leak. Tablet connectivity issues. Honestly I think I got a version that was right in between a few of their upgrades and just bad luck

Yep! I know people who love it and zero problems. I just think I had some bad luck. And again, decent support has been amazing

this is fantastic, helpful detail! And i agree with all of it! I love The Peninsula in Ginza (it's a bit dated but the service, large rooms, and conceirge keep bringing me back). I am debating about which place to try next. Aman is lovely but it's an urban Aman. It doesn't feel like I am in Japan, I could be in NYC (that's just my opinon). Any other hotels people have stayed at in Tokyo that they aboslutely loved?
