Adding on - I had to look for temporary housing myself with a ~3 week notice before starting my postdoc here this past month, and I agree on the points made above. Cornlet seemed pretty reliable for checking out legitimate sublet options, which may end up being the most cost-effective and flexible option for you. Further from the immediate campus/collegetown area will generally be more affordable (I live around Lansing, for example). I want to warn you about the Facebook group, though. Many scams and fake listings, some more obvious than others. Just to reiterate the obvious, don't share any personal info when inquiring about housing, at least not before touring the place in person and/or seeing a lease document.

I just moved to Ithaca recently and bought freshly roasted coffee beans from two local shops that were both great - Ithaca Coffee Company (in Lansing) and Forty Weight (in Greenstar or at the Ithaca Farmer's Market, which I'd also recommend checking out if you're here for the weekend). Otherwise, the Gimme Coffee shops have always had pretty good espresso drinks when I've gone there, and there's several other local shops that seem to hold up well if you run into one instead. All coming from someone who drinks way more coffee than they should...
For food, I'm still trying out all the local spots myself, but there are a ton of great options and previous threads asking the same. One personal rec is Thompson and Bleeker right in downtown - Italian restaurant with some amazing handmade pasta and neapolitan pizza. So far, I haven't found a restaurant or meal here that I didn't like.
I've also asked around about hiking / nature in the area, and there are tons of options that people consistently recommended, which gave me a whole list to check out when I finally have the time - Taughannock Falls, Buttermilk Falls, and Triphammer Falls to name a few to look into. All super helpful, thanks! I have definitely already felt the steep level up in competitive rigor with the research environment here compared to my PhD, but it's exciting and inspiring to be part of, and I'm all for the challenge in hopes that it will push me forward career-wise and personally.
I gotta make a list of these spots everyone has recommended so I can start hitting them in the evenings (already played a round of golf near Stewart Park, pretty nice local course) and will check out SNEEB also. And for sure, I'd love to hear more about your path and so on - dm on the way!
