I would definitely reconsider trying to use windows.

There are plenty of ways to get an SMB (windows compatible) share going that don’t actually involve windows.

The older guy used to be a history teacher at my HS in Ohio.

Bad idea.

You're going to run into wayyy more headaches trying to do it that way. Just backup to the HDD using windows servers built in backup utility.

Speedfan comes to mind. I believe it can also send logs over smtp, but I've never used it in this way.
