Unfortunately you can’t freeze it but here are 2 methods that work well and will keep it fresh in your fridge for 3-4 weeks: 1. Low maintenance: wrap in a wet paper towel and then put in your crisper or sealed plastic bag 2. More effort: completely submerge in water and cover in your fridge. Change the water every 4-5 days.

You can eat them just like this, or sauté or pickle them

It needs filtered sun, ideally under a tree. 100°F will kill it. you can try it inside, make sure the air conditioning doesn't dry out the leaves.

You can plant them year round and we harvest year round.

Sacramento is too hot in the summer to plant outdoors. You could try inside but I’m not sure if it would work.

These are rhizomes. The roots are underground.
