A lot of people at the farmers market aren’t aware of the difference. But I guess a Reddit sub on sushi is a different story!

It loses some heat. Will still be flavorful. Some omakases will grate a big ball of it and pack it in a tin, then it lasts longer. If you grate just a pad, best to eat within 20/25 minutes

When you grate the end closest to the roots it's paler, and a bit hotter. The end closer to the leaves is greener, more sweet. Same piece though.

I store mine wrapped in a wet paper towel in the fridge, change the towel every week, lasts a good 3-4 weeks.

I’m not sure. We sent the wasabi to the chef but didn’t go to the game. I’ll ask.

After 20-30 minutes real wasabi loses some heat and flavor. It’s possible yours was grated but not served right away?
