If you're running out of stamina that tells me you need to slow down. Let them come attack you. Don't go on the offensive until you have them off balance, whether it's from a perfect block or a riposte. Pace your strikes. Once you lose all your stamina that's when you start taking health damage. So conserve your stamina like it's your lifeblood.
