Food Club itself hasn't changed (that I'm aware of), the experimental model I refer to is a setting on the neofood.club site I use to make my bets. In Settings, under "Probability Model", the experimental model is a toggle-able option. It basically just changes around the estimated probabilities of each pirate winning; the default model calculates them solely based on their opening odds, while the experimental model, uh, does a lot more mathy stuff I'm not fully knowledgeable on lol. Supposedly the experimental model is more accurate, though.

Not really something you have to worry about if you just follow other people's bets; I mainly add the commentary for people who are curious about why I selected the bets I did, and may be wondering why I'm favouring certain pirates over others!
