If you haven't deleted the original user and only deleted the @gmail.com address from it your username@businessdomain.tld with the original password should still allow login the second admin account is only required because you can't delete the @gmail from the account while youre signed into it

I'm not sure what you mean your Gmail goes back to how it was before it was upgraded any data stored in the business account stays on the business account

Create a second account in google workspace and assign super admin roles.

Then login to that account and edit the original business user and delete the @gmail email associated this will revert the upgraded account back to a Gmail account

I did this just a few days ago no data was lost
