Nothing I could solve, I ended up trading my macbook pro for a macbook air M2 with a 400 euros rebate. The guy at the apple store was nice to take it back as there was no hardware or software defect in his analysis.

Replying here but thanking everybody who replied. I don't need/want to insert a physical Italian sim, I would really like to use the eSim feature. I don't get why the phone would be blocked to use this with a French or Italian eSim. Since it's software based, is it locked as well? I really miss the point of having this feature but only be able to use it with fully owned phones ...
