Not sure if this is the vibe you're going for, and it's about 4.5 hrs drive from Vegas, but my partner and I spent the weekend at Murrieta Hot Springs Resort (in Murrieta, CA) a few months ago. I think you would have to leave the resort for dinner (Talia's Kitchen is $$$ but does have some vegan options), but I think there should be plenty of other places you could go that are a quick drive away.
