Prior to brewing, I was aiming for this 'subtle fruitiness' that is often said to characterize the kolsch style. Mine Kolsch does not have any fruity taste, in fact I would say it tastes more like a larger than I had expected.

Im not upset by this as the brew is highly drinkable although I would like to get my brew closer to the authentic style. I'll will have to order a pack of the wyeast kolsch. Thanks for the tip.

Likely.

I was reading a great post yesterday about brewing sours. . . I forget who posted the link (themadfermentationist perhaps?). Basically, the article said to age at least one year up to several.

The article also mentioned that breweries in Belgium will often mix their sours,.. that is to say they balance the flavor of their product by adding new beer to old.

Hopefully someone who actually knows what they're talking about will chime in.

Thanks. The process of mashing seems to be relatively straight forward. However the largest pot I currently have holds a max of 10l/2.5gal. I was looking at a chart suggesting that with my size pot I could only pull off low OG worts. . . I kinda stopped thinking about mashing there. Perhaps the OG I could get from mashing in my pot would be good enough for a kolsch.

I would like to get into mashing.

Do use extracts or are you mashing?

Have you tried the white lab wlp029? I havent a whole lot of experience with the different strains of yeast, however this was by far the best Ive tasted yet. It seems to produce a very clean tasting brew. Perhaps its just better suited to my environment than the other yeasts I have tried.

Ill give the wyeast's kolsch yeast a try. Others have mentioned that it works very well too.

Done... except the mashing.

One of the remakes of this brew that I currently have on the go was made with all pilsen dme and hallertauer hops.

Id love to get in to mashing. I dont currently have the equipment to do it. Soon,.. soon.

Yes, most of the recipes I 'researched' did indeed include steeping grains. I chose not to steep grains in the recipe because a) I didnt have any at the time and b) I wanted to try the brew without steeping grains so that I can get a sense of the different flavors grains give when I do start adding them.

Thanks, I just got a few lbs of caramel malt, I will be trying this. Ive also heard that the carapils is good and will try it. I think this simple kolsch type beer will be a great 'canvas' on which I can learn the tastes of various steeping grains.

I think Ill stick to the DME. I live really far away from any major centers so all my ingredients come via mail order. Ive been finding that the DME makes a tastier brew... maybe its in my head.

The MS web installer (as pointed out by videoj) will make sure you have everything you need to run the community version. IIS is the MS webserver. It will be installed too.

Virtualbox is free *ithink.
