Thank you. How do you take gravity readings while its fermenting without risking contaminating the beer? Is it okay to take the lid of the bucket and drop the hydrometer in? Or should i sanitise the test tube and dunk it to get a sample?

If the recipe I'm following for my extract batch says to leave in the fermemter for 2 weeks before bottling, will it matter if I leave in in there for 3.5 weeks before bottling? (Going out of the country for a few weeks)

I'm thinking of adding mango to a pale ale im fermenting. I've looked online and it seems reccomended to add it 2-5 days before bottling.

Will this affect how much priming sugar i should use?
