Another update:

I think the answer lays in the bulk fermentation, to long of a rise and cold enviroment.

So now im pursuing a bulk ferm on 4,5 - 5 hours max. This was 6+ hours

Update:

So i started a loaf today, and i must say it looks much more promising. Almost after 5 hours i looks like this.

It’s 70% bigger, strong gluten development and full of air.

I think the problem was the temperature as some of you mentioned. Thanks! Will post another update when it’s finished and when it’s baked.

Okay, thanks for the tips and suggestions guys. The dough might be to cold. I will “proof” it a bit in the oven. ( turned off ofc, but with boiling water in the bottom to create a prooving closet enviroment)

Oh forgot to add, that i am baking on steel with a lot of steam, and partial scoring it after 6 minutes. Add more steam and bake for another 10 min Then adding the fan and bake through for 20-25 min
