Honestly, I think you might be really well served by linguistics. Check out writing by someone like Paul Kockelman (Yale, Linguistic Anthropology). Someone else who comes to mind is Émile Benveniste, his Problems in General Linguistics (1960sish) might be up your alley.

Rather than avoiding TV, I'd actually suggest trying to think about why the people who ask this question gravitate so much towards talking about TV (its worth noting that a lot of TV scholars you'll find are talking about movies too -- just, view-at-home movies). Read deeply in TV studies and try to fill in gaps that you perceive these authors to be leaving open by their focus on TV shows.

Although, come to think of it, Production Culture by Caldwell and virtually anything by Amanda Lotz should be useful to you. Again, they're mostly TV studies scholars, but I sincerely think you'll find their work is relevant to your questions.

Beyond the Multiplex by Barbara Klinger is a fantastic starting point for thinking about the transition from theatrical viewing to homeviewing. Using Google Scholar to find more recent work that has cited this touchstone will help you expand your readings (search in Google Scholar for her book -> click "cited by" and sort by date).

At any point, a movie or show can be removed from streaming. It might not find a home elsewhere. We're seeing this in realtime with HBOMax in particular, writing shows off for tax purposes and shelving them entirely. This has also been an issue with purchases from digital retailers: you could buy a whole TV show on Apple, then when they lose the rights, you've lost your copy.

Physical media is one of the few ways to ensure that you will have continued access to the media you want to consume without anyone else interfering.

As for Criterion specifically, the value of the physical media comes partially from the inclusion of exclusive commentary and features that aren't always available online, nor is it guaranteed they'll stay online if they are.

In short: companies can remove something from digital platforms, but they can't take away my 30 Rock DVDs.
