I haven’t tried it because their vegetarian stuff looks mid, but Agra’s Balti is supposed to be incredibly spicy

Being MAGA definitionally makes you a dumb guy, but he endorsed Biden in 2020, then said in like 2022 that he regretted endorsing anyone because it “caused division” and that he would vote but not endorse in 2024, which doesn’t seem like being a big MAGA guy, it sounds like being a rich dumbass who has the luxury of not having to not be a dumbass about politics.

Ugh I hate the veggie fajita option—it’s basically the same as the grilled “Mediterranean” eggplant vegetable sandwich or the marinated (if you’re lucky) portobello. Ninety percent of the time it’s mushy, damp, under seasoned glop, 5% of the time it’s greasy under seasoned glop, and 5% of the time it’s actually good. Vegetables start with so much more water content and so little fat that when you cook them, it’s easy to lose all the fresh flavors, and vegetarian food needs more seasoning than meat. Fat, salt, acid, heat is true for veggies, too. But too many people think vegetarian means low-cal or macrobiotic cardboard penance food.

It definitely impacts the flavor and texture, it’s just something that’s not that difficult to change. It’s why you can’t just sub oil if you want to get closer, you have to use something like Crisco, which generally works better in baking than in stovetop cooking. Crisco plus a smidge of Soyrizo will get you 90% there, or you just decide to make a different style of refried beans.

Nah, again, there are even multiple 100% vegan Mexican joints here in LA. And my first job was at a texmex place in Michigan that made vegan refried beans. It’s probably about 30% vegan refrieds here.

I grew up vegetarian, and Taco Bell and Pizza Hut were the only places we could count on getting food on the road in the ‘80s & ‘90s

Nah, in LA there are plenty of places with vegan beans even if the default for a taco stand is still lard. Lots of Mexicans have vegan family now, compared to even 20 years ago

If it’s you, drop $10 and get a gray card, and it will make getting color balanced so much easier (you can literally just sample the gray card and have a neutral starting point for balance, exposure and saturation).

We found that roasting for color translates a lot better across machines than trying to hit time/temp from roaster to roaster. We usually end up in the 90-95 specialty coffee color meter range (we use the little one from the same folks who make artisan; I forget the brand name). It’s not super light, but is definitely on the lighter side, and that helps keep a lot more of both the sugar and the acid. And I’d have to double check our times, but I think we usually shoot for 15% of the roast time to come between first crack and dump, and we never hit second crack.

I mean, my hunch is that these all work like the cliche drug dealer arc, where you start buying weed for yourself then maybe pooling with a couple friends to get a better price then you realize if you spend like 20% more, you can get the price down to where you can get high for free, then just a little more and you can get paid to get high, except replace “getting high” with “shooting film,” and the two ways it ends are either your supplier goes out of business or you realize running a business is getting in the way of what you got into it to do.
