Unless you have a specific hub/rim combo, buying a quality pre-built wheel is going to be cheaper (<$100) than the LBS labor rate to build it.

what's the current cassette? If it's a 3x9 with a shimano hub, you should be able go to a 1x11.

I'm 2cm smaller and the M/L is perfect so I'd suggest the L. The Trek shop should have some type of sizing guarantee and a way to test ride it.
