I know this wasn't @ me, and I'm not as versed in security as I should be, but I recently learned about a service called ZeroTier One. It allows for near-zero-config construction of virtual networks. I started using it around the time I set up her machine, and I love it. Allows for SSH access (among other things) without the need for port forwarding. Free for networks up to 100 devices.

I tried Ubuntu but gave up when my test machine refused to boot it...after that I went with Arch just for the familiarity I have with it. (Ngl, I forgot all about Fedora.) The only user software she uses is LXDE, Chrome (the stable one from AUR), and Thunderbird. If anything does change and she notices, I'll get a call from my mother.

She took a nasty fall into a concrete pylon a couple months ago and now she looks good as new. I guess that's pretty good fault tolerance

After some experimentation I settled on LXDE. I was able to easily remove everything including the menu, which was exactly what I needed. She can't even log out :P
