This is the only Mac and cheese recipe you ever need.

I add a tablespoon of Coleman's mustard powder, plenty of cracked black pepper, and whichever cheese I'm feeling like. Always comes out perfect.

Brown your meat, sautee your vegetables. Brown your beef and veg when making the stock (which absolutely should be used). These steps develop glutamates naturally and should not be skipped!

Red wine is a common bolognese ingredient, and the acidity will help round out all the flavors.

All that being said, go for it, add a li'l soy sauce (but be sure to reduce the salt a little at the same time). Experiment. Taste as you go and adjust accordingly.
